This dish reflects the rich culinary heritage of the Caribbean, where fresh fish and simple ingredients are celebrated. Avocado oil is healthier but may be more expensive.
Add 2 and 1/2 cups of all-purpose flour to a mixing bowl.
Add 1 tbsp of salt and 1 and 1/2 tbsp of sugar to the flour and mix.
Add 1 and 1/2 tbsp of dry yeast to the mixture and mix well.
Add 2 tbsp of butter and mix until there are no chunks.
Gradually add water until the dough reaches the desired texture, mixing as you go.
Cover the bowl with a damp paper towel and let the dough sit for about 30-45 minutes.
Wash the mackerel with salt and lemon, then place it in a pot of boiling water with a slice of lemon and some salt.
Boil the mackerel for approximately 15 minutes.
Remove the mackerel from the pot and let it cool down before flaking the meat off the bones.
In a frying pan, heat 4 tbsp of canola oil until hot.
Fry the flaked mackerel in the oil until cooked through and any water has evaporated.
Add chopped tomatoes, crushed garlic, onions, chopped celery, and chopped scallions to the pan with the mackerel.
Season with 1 tbsp of black pepper, hot chili powder, and salt to taste.
Squeeze some lemon juice into the mixture and stir well.
Let the mixture cook until the tomatoes soften.
After the dough has rested, divide it into 8 portions and shape each into a ball.
Flatten each ball slightly, but not too thin, to keep them fluffy.
Heat cooking oil in a pot for frying the bake.
Fry each piece of dough until golden brown on both sides, about 3-4 minutes per side.
Serve the fried bake warm with the mackerel choka on the side.
