Originating from Cyprus, Sheftalies are a traditional dish made from a mixture of meats, often enjoyed during family gatherings or festive occasions. These sausages highlight the Mediterranean's rich flavors, combining spices and fresh herbs. Today, they are popular not only in Cyprus but also among Mediterranean food enthusiasts worldwide, often served with pita and fresh vegetables.

Combine ground pork and ground lamb in a large bowl.
Finely chop onion and garlic, then add to the meat mixture.
Chop parsley and add it to the bowl along with cinnamon and allspice.
Season the mixture with salt and pepper, then mix thoroughly until combined.
Soak caul fat in cold water for 30 minutes to soften.
Take a small handful of the meat mixture and shape it into an oval patty.
Wrap each patty in a piece of caul fat, ensuring it is fully covered.
Preheat a grill or skillet over medium heat until hot.
Lightly brush the grill or skillet with olive oil to prevent sticking.
Place the wrapped sausages on the grill and cook for 15-20 minutes, turning occasionally, until browned and cooked through.
Remove from heat and let rest for a few minutes before serving.
Serve with lemon juice drizzled on top.
