1

Toast whole cumin seeds and mustard seeds in a dry frying pan until they start to pop, then remove from heat.

2

Transfer toasted seeds to a pestle and mortar and grind them to a coarse powder.

3

Heat about 1 tablespoon of sunflower oil in the same frying pan over low to medium heat.

4

Add chopped onion, grated ginger, chopped green chili, and garlic to the pan; stir to combine.

5

In the pestle and mortar, mix ground cumin and mustard seeds with ground coriander, ground turmeric, cardamom pods, and garam masala, then add tomato puree to create a paste.

6

Add the spice paste to the pan with the onion mixture and stir well.

7

Cut chicken breasts into bite-sized pieces and add to the pan, stirring to coat with the spices; cook for a couple of minutes until the chicken changes to an opaque white color.

8

Pour in plain cold water, cover loosely with a lid, and cook on low heat for about 20 minutes until the chicken is cooked through.

9

After 20 minutes, add chopped green pepper to the pan and stir; cook for an additional 5 minutes until the pepper is tender.

10

Add freshly chopped coriander to the curry just before serving to maintain its fresh flavor.

11

Fluff Tilda pure basmati rice with a fork and serve alongside the chicken curry.
