2 tablespoons powdered all-purpose seasoning
1 teaspoon onion powder
1 teaspoon ginger powder
1 teaspoon garlic powder
1 chili pepper
2 teaspoons curry powder
1.5 teaspoons olive oil
1 cup water
12 pimento seeds
1.5 inches ginger
2 cloves garlic
1 to 1.5 teaspoons dried thyme
1 scotch bonnet pepper
1 medium potato
0.5 medium carrot

Season duck meat with 2 tablespoons orange seasoning blend and 2 tablespoons powdered all-purpose seasoning.

Add 1 teaspoon onion powder, 1 teaspoon ginger powder, and 1 teaspoon garlic powder to the duck.

Add a small piece of chili pepper for spice, or scotch bonnet pepper if preferred.

Mix in 2 teaspoons curry powder with the duck.

Add 1.5 teaspoons olive oil to the duck and massage the seasoning in.

Transfer seasoned duck to a container and marinate in the fridge for 24 hours.

Heat 1 tablespoon olive oil in a pot over low heat and add 2 teaspoons curry powder to cook for 2-3 minutes.

Add duck pieces to the pot and cover for 5 minutes to sweat.

Stir the duck and cover again for another 5 minutes.

Add 1 cup of water to the pot until it sits at the same level as the duck.

Add 12 pimento seeds, 1.5 inches of ginger, and 2 cloves of garlic to the pot.

Cover and cook for 10 minutes before adding vegetables.

Add diced medium potato and half a medium carrot to the pot and cook for 5-8 minutes.
