1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon matey seed
2 tablespoons vegetable oil
1 medium onion (chopped)
5 lb duck

Blend the green seasoning (Shard Beni, thyme, pimento peppers, garlic, and optional hot pepper).

Mix 2 tablespoons of green seasoning, 2 tablespoons of curry powder, 2 tablespoons of duck and goat curry powder, 1 tablespoon of ground cumin, 1/2 cup of water, 1 1/2 teaspoons of salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of matey seed in a bowl.

Heat 2 tablespoons of vegetable oil in a pot over medium heat.

Add matey seed to the oil and cook until dark brown.

Add the curry paste mixture to the pot and fry for about 2 minutes.

Add the seasoned duck meat to the pot and mix well with the curry paste.

Cover the pot and let the duck cook for about 10 minutes.

Add enough water to cover the meat (about 4 cups) and cover the pot again.

Cook the duck for 1 hour and 15 minutes until tender.
