Duck Congee

1 cup jasmine rice
8 cups chicken broth
2 cups cooked duck, shredded
1/4 cup green onions, chopped
1/4 cup ginger, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
Salt to taste
White pepper to taste
Optional toppings: fried shallots, cilantro, chili oil

Rinse the jasmine rice under cold water until the water runs clear.

In a large pot, combine the rinsed rice and chicken broth. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1 hour, stirring occasionally, until the rice breaks down and the congee reaches a creamy consistency.

Add the shredded duck, minced ginger, soy sauce, and sesame oil to the pot. Stir well to combine.

Continue to simmer for an additional 10-15 minutes, allowing the flavors to meld together.

Season with salt and white pepper to taste.

Ladle the congee into bowls and top with chopped green onions and any optional toppings you desire.
