1 tablespoon ginger, minced
1 scotch bonnet pepper, minced
1 tablespoon nutmeg
1 tablespoon cinnamon
2 tablespoons light brown sugar
1/4 cup soy sauce
2 tablespoons lemon juice
1 lime, juiced
1 teaspoon salt
2 tablespoons olive oil
2 lbs pork ribs

Make fresh jerk seasoning by blending onion, scallion, thyme, ginger, scotch bonnet pepper, nutmeg, cinnamon, light brown sugar, soy sauce, lemon juice, salt, and oil together.

Clean the ribs with lime and rinse them.
