1 Onion
5 cloves Garlic

1.8 ounces Green Bell Pepper aka Capsicum
1 Tablespoon Olive Oil
1/4 Teaspoon Caraway Seeds optional
1/2 Teaspoon Cumin
1/4 Teaspoon Black Pepper
1/4 Teaspoon Cayenne Pepper ground or paprika powder
1/2 Teaspoon Coriander Seeds ground optional
1/4 Teaspoon Salt
2 Tablespoon Tomato Puree optional
1/2 cup Water
4 Eggs
1.8 ounces Feta Cheese
Parsley or Cilantro leaves fresh
a squeeze of Lemon juice optional

Heat olive oil in a skillet over medium heat.

Add chopped onion and minced garlic, sauté until softened.

Stir in chopped green bell pepper and cook for a few minutes.

Add peeled tomatoes, cumin, black pepper, cayenne pepper, coriander seeds, and salt. Cook until the mixture thickens.

Stir in tomato puree and water, simmer for a few minutes.

Make wells in the sauce and crack the eggs into them.

Cover the skillet and cook until the eggs are set to your liking.

Sprinkle feta cheese on top and garnish with parsley or cilantro and a squeeze of lemon juice before serving.
