Cut off the heads of all the tomatoes.

Finely chop the bell pepper.

Slice the garlic into tiny pieces.

Take a grill pan, pour 1 tablespoon of olive oil, and heat it.

Grill the tomatoes to give a smoky flavor to the sauce.

Once done, put the tomatoes into a blender and let them cool for a few minutes before pureeing.

Take another pan, pour 2 tablespoons of olive oil, and heat it.

Add the chopped onions and sliced garlic to the pan, stir well, and fry until the garlic and onions turn soft and light brown.

Add cumin powder, coriander powder, and paprika to the pan and mix well, letting the spices cook.

Add the chopped bell pepper and stir well.

Put in the blended tomatoes and mix them well with some salt.

Add the homemade chili paste and stir well, then cover the lid for about 8 to 10 minutes.

Add crushed pepper and let the sauce simmer until the water inside has reduced and the gravy seems cooked.

Make little spaces inside the sauce to place the eggs gently one by one, ensuring the yolks do not break.

Cover with the lid and let it cook for about 5 minutes for the eggs to cook, or longer if you prefer well-done eggs.
