2 sachets vanilla sugar
130 g melted and cooled butter
6 egg whites
170 g sugar
rum essence
300 g ground walnut kernels
10 g cocoa
oil for greasing

Sift 1 kg of type 000 wheat flour into a bowl.

Add 1 teaspoon of salt to the wheat flour and mix well.

Add the grated peel of 2 oranges and a lemon to the wheat flour.

Break 6 eggs, separating the yolks from the whites.

Add the yolks to the flour and set the whites aside for the filling.

In a smaller bowl, add 14 g of yeast, 1 tablespoon of sugar, and 1 tablespoon of wheat flour.

Add 100 ml of warm milk to the yeast mixture, mix, and leave aside for 10-15 minutes to activate.

After the yeast has activated, add it to the wheat flour mixture.

Add 300 g of sugar to 500 ml of warm milk and mix well until the sugar dissolves.

Add the milk to the wheat flour and mix with a spoon.

Add 2 sachets of vanilla sugar and knead the dough for 20 minutes.

If the dough is too soft, add a little more wheat flour.

Gradually incorporate 130 g of melted and cooled butter into the dough.

Cover the dough with cling film and let it rise for 1 hour.

For the filling, mix 6 egg whites with 170 g sugar and rum essence.

Add 300 g of ground walnut kernels and mix well.

Add 10 g of cocoa to the mixture and combine.

Grease the table with oil and place the dough onto the table.

Divide the dough into 4 equal parts and spread each piece out.

Add the walnut mixture over the entire surface of the dough, leaving the edges free.

Sprinkle raisins and diced Turkish delight over the walnut mixture.

Roll the dough tightly and repeat with the other pieces.

Transfer the rolled sweet bread to a tray lined with baking paper.

Let the dough rise in a warm place for 40 minutes.

Brush the sweet bread with egg yolk and sprinkle poppy seeds on top.

Put the sweet bread in the oven preheated to 160 °C for 50-60 minutes.
