In a bowl, combine cream cheese, cheddar cheese, and green onions; mix until smooth.
Add the beef mixture to the cheese mixture; stir until fully combined.
Lay an egg roll wrapper on a clean surface; place a generous spoonful of filling near one corner.
Fold the corner over the filling, then fold in the sides, and roll tightly to seal; use water to help seal edges.
Heat vegetable oil in a deep fryer or large pot to 350°F.
Carefully add egg rolls in batches; fry until golden brown, about 3-4 minutes per side.
Remove egg rolls and drain on paper towels; season with salt immediately.
Serve hot with ketchup and pickles on the side.
