Cayenne can be substituted with paprika for less heat.

1

In a pan, add your meat (lamb or beef) and cover to simmer for 10 to 15 minutes.

2

While the meat is cooking, cut the spinach leaves and spring onions.

3

Dice half a medium onion and add it to the blender with some water; blend until smooth.

4

Add the blended onion and habanero pepper to the meat.

5

Add seasoning or salt and more water, then bring to a boil, using less water as the spinach will generate liquid.

6

Grind 300g of red peanuts or use powdered peanut if preferred.

7

Once the meat is cooked and tender, take it out and set aside.

8

Add the ground peanut to the pan, stirring continuously to avoid lumps.

9

Once smooth, add more water as needed, being mindful of the spinach's water content.

10

Add local bean (N2) to enhance flavor.

11

Cut the spinach leaves into slices and squeeze out excess water before adding them to the mixture.

12

Add one cube of Maggi seasoning, using half for good reason.

13

Once the water evaporates from the spinach, add palm oil and cook for a few minutes.
