Chicken Yassa

1 tablespoon cider vinegar
1 tablespoon lime juice

Clean the chicken legs and soak them in lime juice and vinegar for half an hour in the fridge.

Add 1 tablespoon of dijon mustard, 1 maggie cube, half of the salt and pepper, lamb and chicken seasoning, and ugandan chili spice to a bowl and mix.

Marinate the chicken legs with the seasoning mixture thoroughly.

Place the marinated chicken on a tray and grill in the oven at gas mark 180 for half an hour.

Slice the onions and add them to the same bowl with leftover marinade, adding another maggie cube, 1 tablespoon of lime juice, and 1 tablespoon of cider vinegar.

Mix the onions with the marinade and let them soak for a couple of minutes before turning off the heat.

Prepare rice to serve with the chicken yassa.

Once the chicken is cooked, plate it over the rice, add gravy, and garnish with curly parsley.
