Start by preparing the mixed seeds and nuts: white sesame seeds, walnuts, almonds, cashews, pumpkin seeds, chia seeds, and black sesame seeds.
Mix all the seeds and nuts together in a bowl.
Roast the mixed seeds and nuts on low flame without any oil until they are well roasted.
In a separate pan, melt the jaggery with just a tablespoon of water on low flame.
Check the consistency of the jaggery syrup by dropping a little into a bowl of water; it should be stretchable when ready.
Once the jaggery is ready, add a small amount of baking powder to it and mix well; it will foam up, which is normal.
Quickly add the roasted mixed seeds and nuts to the jaggery syrup and mix thoroughly.
Prepare a greased surface using butter paper or a plate to set the chikki.
Pour the mixture onto the greased surface and spread it evenly while it's still hot.
Use a rolling pin or a glass to flatten the mixture evenly.
Score the mixture with a knife to make cutting easier once it cools down.
Allow the chikki to cool completely before cutting it into pieces.
