1

Prepare the ingredients for the frittata: potatoes, roasted red peppers, sliced courgettes, eggs, feta cheese, double cream, garlic, salt, pepper, nutmeg, and thyme.

2

Parboil the potatoes in a pot of cold water on high heat for about 15 minutes until tender.

3

Roast the red peppers in a hot oven for about 15 minutes until they are well-cooked, then let them cool before peeling.

4

Slice the courgettes, then lightly pan-fry them in a frying pan with a bit of oil to start the cooking process.

5

Peel the cooled roasted red peppers, removing the skin easily after roasting.

6

Layer the bottom of a 9-inch springform cake tin with the parboiled potatoes, overlapping them as you go, without peeling them for a rustic look.

7

Season the potato layer with salt, pepper, and thyme.

8

Add a layer of roasted red peppers on top of the potatoes.

9

Sprinkle feta cheese over the peppers, covering as much as possible.

10

Add a layer of sliced courgettes on top of the feta, followed by another layer of potatoes, spiraling them out from the center.

11

In a mixing bowl, finely chop garlic and add it to the eggs, then whisk together about 10-12 eggs with double cream, salt, and pepper.

12

Pour the egg mixture over the layered ingredients in the springform tin, stopping just before the top.

13

Press down gently to remove any air bubbles and ensure the mixture is evenly distributed.

14

Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit).

15

Bake the frittata in the oven for about 40 minutes to 1 hour until the center is set and no longer milky.

16

Let the frittata cool for about 1.5 to 2 hours before serving.

17

Carefully remove the frittata from the springform tin and slice it into wedges for serving.
