Swedish Meatballs

Cultural Context

Originating from Sweden, Swedish meatballs (Köttbullar) are a beloved dish that showcases the country's culinary tradition of using simple, hearty ingredients. Traditionally served with lingonberry sauce and creamy gravy, they are a staple at festive gatherings and family meals. Today, they have gained international popularity, often appearing on menus around the world, especially in Scandinavian-themed restaurants.

SESEmain
6 servings
Servings4
150 grams blackberries
50 grams blueberries
200 grams sugar
squirt of lemon juice
500 grams beef mince
250 grams pork mince
5 tablespoons whole milk
100 grams white breadcrumbs
1 teaspoon salt
1 teaspoon white pepper
1 egg
1 clove garlic
butter
flour
1 cup beef stock
1 cup vegetable stock
1 cup double cream
2 teaspoons soy sauce
1 teaspoon Dijon mustard
1

Make the jam first by combining blackberries, blueberries, sugar, and lemon juice in a pan.

2

Bring the mixture to a boil slowly, stirring until the fruit disintegrates.

3

Test the jam for setting by dragging a wooden spoon through it; it should part for a moment before rejoining.

4

For the meatballs, combine minced beef and pork, milk, breadcrumbs, salt, pepper, chopped onion, and garlic in a mincer.

5

Mix until the texture is smooth and paste-like.

6

Form the mixture into meatballs weighing 25 grams each.

7

Chill the meatballs in the fridge for 2 hours or in the freezer for 30 minutes.

8

Preheat the oven to 160°C for convection or 180°C for conventional.

9

Heat vegetable oil in a frying pan over medium heat and brown the meatballs on all sides.

10

Transfer the meatballs to the oven and bake for 15 minutes, then check and bake for another 15 minutes if needed.

11

In a small saucepan, melt butter and whisk in flour, cooking for a few minutes.

12

Add beef stock, vegetable stock, and double cream; stir until thickened.

13

Add soy sauce and Dijon mustard to the sauce and mix well.
