Instructions

  1. 1Wash colocasia leaves and pat dry.
  2. 2Prepare a batter by mixing gram flour with jaggery, tamarind pulp, and spices until smooth.
  3. 3Spread the batter evenly on the underside of each colocasia leaf.
  4. 4Stack the leaves and roll them tightly from one end to the other.
  5. 5Secure the roll with kitchen twine or string.
  6. 6Place the roll in a steamer and steam for 30-40 minutes until firm.
  7. 7Remove the roll from the steamer and let it cool for a few minutes.
  8. 8Slice the roll into thin rounds after cooling.
  9. 9Heat oil in a pan and add sesame seeds for tempering.
  10. 10Fry the sliced patra in the oil until golden brown on both sides.
  11. 11Serve hot with chutney or sauce.

  • 4 large colocasia leaves
  • 1 cup gram flour (besan)
  • 1/2 cup water
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1 tbsp tamarind pulp
  • 1 tbsp jaggery (optional)
  • 2 tbsp oil for frying

Instructions

  1. 1Wash the colocasia leaves thoroughly and pat them dry.
  2. 2In a bowl, mix gram flour, turmeric powder, red chili powder, cumin powder, coriander powder, salt, tamarind pulp, and jaggery (if using) to form a thick paste.
  3. 3Spread a thin layer of the gram flour mixture on the underside of each colocasia leaf.
  4. 4Stack the leaves on top of each other and roll them tightly from one end to the other, forming a log.
  5. 5Cut the rolled leaves into 1-inch thick pieces.
  6. 6In a steamer, place the cut pieces and steam for about 20-25 minutes until cooked through.
  7. 7Once steamed, let them cool slightly and then slice them into smaller pieces if desired.
  8. 8Heat oil in a pan and shallow fry the pieces until they are golden brown and crispy on all sides.
  9. 9Serve hot with chutney or sauce of your choice.
