Instructions
- 1Wash colocasia leaves and pat dry.
- 2Prepare a batter by mixing gram flour with jaggery, tamarind pulp, and spices until smooth.
- 3Spread the batter evenly on the underside of each colocasia leaf.
- 4Stack the leaves and roll them tightly from one end to the other.
- 5Secure the roll with kitchen twine or string.
- 6Place the roll in a steamer and steam for 30-40 minutes until firm.
- 7Remove the roll from the steamer and let it cool for a few minutes.
- 8Slice the roll into thin rounds after cooling.
- 9Heat oil in a pan and add sesame seeds for tempering.
- 10Fry the sliced patra in the oil until golden brown on both sides.
- 11Serve hot with chutney or sauce.

- ●1 cup gram flour (besan)
- ●1/2 cup water
- ●1 tsp turmeric powder
- ●1 tsp red chili powder
- ●1 tsp cumin powder
- ●1 tsp coriander powder
- ●1 tsp salt
- ●1 tbsp tamarind pulp
- ●1 tbsp jaggery (optional)
- ●2 tbsp oil for frying
Instructions
- 1Wash the colocasia leaves thoroughly and pat them dry.
- 2In a bowl, mix gram flour, turmeric powder, red chili powder, cumin powder, coriander powder, salt, tamarind pulp, and jaggery (if using) to form a thick paste.
- 3Spread a thin layer of the gram flour mixture on the underside of each colocasia leaf.
- 4Stack the leaves on top of each other and roll them tightly from one end to the other, forming a log.
- 5Cut the rolled leaves into 1-inch thick pieces.
- 6In a steamer, place the cut pieces and steam for about 20-25 minutes until cooked through.
- 7Once steamed, let them cool slightly and then slice them into smaller pieces if desired.
- 8Heat oil in a pan and shallow fry the pieces until they are golden brown and crispy on all sides.
- 9Serve hot with chutney or sauce of your choice.
