Combine warm milk, sugar, melted butter, and yeast. Let rest 5 minutes.
Mix flour and salt in a stand mixer bowl.
Add milk mixture and mix for 5 minutes until sticky dough forms.
Add beaten egg and mix until a smooth dough forms. Add 1-2 tsp flour if too sticky.
Knead 1 minute, then let the dough rise 1 hour in a warm place until doubled.
Prepare filling by mixing softened butter with cinnamon or cardamom-pistachio and sugar.
After the dough rises, knead 2-3 minutes, roll out, and spread filling.
Cut 6 strips and form knotted buns as shown in the video.
Let buns rise 20 minutes.
Brush with egg wash, sprinkle sugar pearls and chopped pistachios.
Bake at 180°C (350°F) for 15-20 minutes until golden brown.
