Crispy Indonesian Fried Stuffed Tofu

1 small shallot
2 cloves of garlic
¾ tbsp oil
1 cup (100 g) sliced cabbage
1 grated carrot
¾ tsp chicken powder
Salt to taste (⅛ tsp-plus)
White pepper to taste
¾ tsp sugar
¾ cup (70 g) bean sprouts
1 green onion, sliced
9 tbsp bread flour
4 ½ tbsp rice flour
2 tsp chicken powder
Salt to taste (⅛ tsp plus)
⅛ tsp cumin powder
½ tsp baking powder
⅛ tsp coriander powder
⅛ tsp garlic powder
White pepper to taste
1 large egg
155 ml-plus water

Rub a pinch of salt on the skin of the tofu and set aside.

Pound shallot and garlic into a paste and stir-fry on medium heat until fragrant.

Add cabbage and carrot and stir-fry briefly. Add bean sprouts and green onion, stir well.

Add salt, sugar, chicken powder and white pepper. Cook until slightly soft. Remove and let cool.

In a bowl, mix well the bread flour, rice flour, chicken powder, salt, baking powder, cumin, coriander, garlic powder and white pepper.

Add egg, then water little by little, mixing well. Add more water if the batter is still too thick.

Heat oil on medium-high heat.

Dip tofu in batter.

Deep-fry until golden brown and crispy.

Remove and drain.
