1 Cinnamon Stick
8 Star Anise
2 Black Cardamom
1/2 Tbs Fennel Seed
2 Tbs Coriander seeds
1/2 Cup Fish Sauce
1/2 Tbs Salt
1/2 Tbs Mushroom Seasoning
24 cups of water
1 Whole Chicken
5 Chicken Thighs
2 Onions Charred
4 Shallot Charred
1 Ginger Charred
Green onions
White onion
Cilantro
Jalapeño Peppers
Thai chilli pepper(optional)

Simmer the broth with brown sugar, cinnamon stick, star anise, black cardamom, fennel seed, coriander seeds, fish sauce, salt, mushroom seasoning, and water.

Add the whole chicken and chicken thighs to the broth and cook until tender.

Char the onions, shallots, and ginger, then add them to the broth for flavor.

Once the chicken is cooked, remove it from the broth, shred the meat, and set aside.

Assemble the pho by placing the shredded chicken in a bowl, adding the broth, and garnishing with green onions, white onion, cilantro, jalapeño peppers, and Thai chili pepper.
