4-5 Liters of Water
Fish Sauce
Sea Salt
1-2 Cinnamon Sticks
1 Codamon Pod
3 Star Anise
1/2 Tbs of Coriander
1/2 Tsp of Fennel Seeds
Charred Ginger
Shallots
Onion
Rice Noodles
Cilantro's
Green Onions
Bean Sprouts
Basil
Lime
Lemon
Jalapeño
Chili peppers
Kaffir Lime Leaves
Culantro
Vietnamese Coriander

Wash Chicken

Add Water to Pot. Bring it to a Boil.

Char Aromatics & Spices.

Skim out the Gunk and Scums from Pot (as shown in video).

Bring Heat down to Low. Simmer for 1 1/2 to 2 Hours Mins. Depending on your Stove Top.

Clean and Remove Extra Char (as shown in video).

Clean over Cold Water. Introduce to Broth.

Place Toasted Spices in a Cheesecloth or Tea Bag. Place in Broth.

Add Rock Sugar

Add Sea Salt

Add Fish Sauce

Let it to Continue to Simmer

Remove Chicken. Give it a Ice Bath.

Add Sea Salt, and Fish Sauce to Taste.

Cut Chicken to Desired Size.

Strain Broth over Colander

Cook Rice Noodles. Place Noodles in a Bowl. Ladle your Desired Amount of Broth.

Enjoy with Veggies and Herbs. Side of Sriracha and Hoisin for Dipping Sauce.
