Chicken Pho

2-inch charred ginger
1 onion
½ an apple
¼ cup fresh coriander
1 ½ tbsp coriander
4 cloves
½ star anise
1 tsp cooking oil
9 cups water
1 whole chicken
1 ½ tbsp fish sauce
½ tsp sugar
1 tbsp onion
1 tbsp fresh coriander
1/2 tbsp green onions

Roast ginger for 2 minutes

Add coriander seeds, cloves, and star anise in a large pot and fry until fragrant

Add cooking oil, onion, charred ginger, and apple

Pour in room temperature water

Add a whole chicken and fresh coriander

Cook for 10 minutes on high heat

Remove excess foam

Cover with lid and cook for 30 minutes on low to medium heat

Turn the chicken and cook for another 5 minutes

Remove the chicken and shred chicken into chunks

Strain out the broth into a cup and pour it into a large pot

Add fish sauce, sugar and desired amount of rice noodles

Cook the rice noodles for 2-3 minutes

Transfer out the rice noodles into a pho bowl

Layer it with chicken pieces, onions, green chilies, and pho broth

Garnish with green onions and fresh coriander
