5 tbsp Ghee
200g Sugar
½ tsp Cardamom powder
¼ tsp Salt
1 pinch Saffron
½ tbsp Lemon juice
2 tbsp Ghee
1 ½ tbsp Rice flour

Take 250g of flour in a mixing bowl.

Add ¼ tsp of salt, mix it and then add 5 tbsp of ghee.

Mix it properly.

Add water bit by bit while kneading the dough.

Cover it and keep aside for 10-15 minutes.

Meanwhile, heat up a pan and add 200g of sugar.

Add 150ml of water and stir it until the sugar dissolves in the water.

Let it boil for 4-5 mins.

Add a pinch of saffron and ½ tsp of cardamom powder.

Then, add ½ tbsp of lemon juice and stir it together.

Check if it is ready by using your fingers. It should be sticky and then keep it aside.

Take 1 ½ tbsp rice flour or maida in a bowl and add 2 tbsp of ghee in it.

Mix it well and take the dough.

Divide it into 5 equal pieces.

Roll the dough like how you would with rotis.

Repeat the process.

Now take one roti, spread some of the flour-ghee mixture on top of it evenly.

Now put another roti on the top of it and repeat the process with the rest.

Roll it and use water to stick it together.

Cut it into pieces.

Take a piece, press it down with your fingers and roll it out.

Repeat it with the other pieces.

Heat up some oil in a pan.

Fry the pieces over low to medium flame until it turns golden brown.

Put it in the warm sugar syrup for 4-5 mins and the khaja will be ready.
