4 green plantains
2 cups water
1 cup vegetable oil
1 teaspoon salt
2 cloves garlic
1 medium tomato
1 small onion
1/4 cup fresh cilantro
1 ripe mango
1 lime

Cut the plantains into pieces about 1/4 inch thick.

Boil shallow water in a saucepan.

Cook the plantain pieces in boiling water for 4 to 6 minutes until soft on the outside.

Use a fork to test if the plantains are done; they should be soft enough to pierce easily.

Remove the plantains from the water and let them cool slightly.

Place Saran Wrap over the plantains and smash them down with a saucer to flatten.

Heat vegetable oil in a pan until hot.
