Cut the ends off the plantains and slice down the back to peel them.

Heat frying oil in a saucepan on maximum heat until hot.

Fry the plantains for about 1.5 minutes until golden brown, stirring to circulate in the oil.

Remove the fried plantains and place them on a plate lined with paper towels to drain excess oil.

Smash the fried plantains using a wooden smasher.

Refry the smashed plantains in the hot oil until golden brown, about a couple more minutes.

Remove the refried plantains and place them on paper towels again to drain.
