Servings4
250 g butter
200 g sugar
3 eggs
250 g Magerquark
2 small cans mandarin oranges
300 g flour
50 g starch
6 g baking powder
150 g powdered sugar
2-3 tablespoons mandarin juice
1

Preheat the oven to 180°C.

2

In a bowl, cream together 250 g room temperature butter and 200 g sugar for a few minutes until a creamy mixture forms and the sugar and butter are well combined.

3

Add 3 eggs one by one, ensuring all ingredients are at room temperature.

4

Incorporate 250 g Magerquark into the mixture.

5

Add 2 small cans of drained mandarin oranges, saving the juice for the glaze, and mix well, allowing the fruits to break down.

6

In a separate bowl, combine 300 g flour, 50 g starch, and 6 g baking powder, then sift this mixture into the batter.

7

Grease a 25 cm Gugelhupf baking pan and dust it with flour.

8

Pour the batter into the prepared pan.

9

Bake in the oven for about 60-65 minutes, using the skewer test to check for doneness (top and bottom heat).

10

Let the cake cool for a short while, then remove it from the pan after 10 minutes and allow it to cool completely.

11

Meanwhile, mix 150 g powdered sugar with 2-3 tablespoons of mandarin juice until smooth, ensuring it runs nicely off the spoon.

12

Glaze the cooled cake with the prepared icing.
