The dish symbolizes prosperity and is enjoyed by families during celebrations. Its rich filling of chana dal and jaggery offers a delightful contrast to the soft, wheat-based dough. Today, Puran Poli is cherished not only in Maharashtra but across India, with various regional adaptations.
jaggery

whole wheat flour

Spelt flour offers a nutty flavor and is more nutritious.
chana dal

💰Cheaper: yellow split peas
Red lentils cook faster and are a good substitute.
In a mixing bowl take maida, turmeric powder & salt. Add water & knead soft dough.
Now add oil in batches & knead the dough. Set it aside for 2 hours.
Rinse & soak chana dal in water for 4-6 hours. Drain off water.
In a pressure cooker add chana dal & water. Pressure cook the dal for 3 whistles.
Drain the chana dal in a colander. Remove excess water.
Grind the chana dal to a fine powder in a mixer. Set it aside.
Heat jaggery in a pan over low heat.
When jaggery starts to melt add the ground chana dal. Mix it well.
Add nutmeg powder & cardamom powder. Mix it well. Let it cool down completely.
Now take out a small portion of poli & flatten it.
Take out a small portion of Puran & stuff it inside the poli.
Roll the Puran Poli as thin as possible.
Fry it on a tawa (iron griddle) over medium heat.
Fry on one side, apply ghee/oil. Flip, apply ghee & fry on the other side too.
