Preheat the oven.

In a large bowl, combine brown sugar and white sugar.

Add a mixture of whole wheat flour and regular flour to the bowl.

Add spices to the dry mixture and toss together.

Prepare the moist ingredients: shredded apple, fresh pineapple, raisins, unsweetened coconut, carrots, and chopped walnuts.

Mix the moist ingredients into the dry mixture.

In a separate bowl, whisk together 3 eggs, vegetable oil, and vanilla.

Pour the egg mixture over the dry and moist ingredients and mix gently with a spatula, being careful not to over mix.

Liberally spray muffin top pans with baker's joy spray to prevent sticking.

Spoon the batter into the muffin top pans.

Bake in the oven until done (exact time not specified).

Let the muffins cool as long as possible before removing them from the pan.

To remove, place a flat baking sheet with parchment paper on top of the muffins and flip it over.

Let the muffins cool completely before serving.
