¾ cup old-fashioned oats toasted, divided
2 tablespoons salted butter melted
2 cups all-purpose flour
1¼ cups granulated sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
¼ teaspoon table salt
2 cups shredded carrots peeled and excess moisture squeezed out
½ cup golden raisins
½ cup Honey Roasted Chopped Pecans Fresh Gourmet
½ cup sweetened flaked coconut
½ cup shredded apple cored & peeled
¼ cup toasted old-fashioned oats prepared earlier

1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon orange zest

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large mixing bowl, combine the flour, sugar, baking soda, salt, and cinnamon.

In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined.

Fold in the grated carrots, crushed pineapple, chopped walnuts, and raisins until evenly distributed.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
