Preheat the oven to 375 degrees.

In a large bowl, combine 1 and 1/3 cups of oil and 4 eggs (or 5 if using small eggs).

Add 4 and 1/2 tablespoons of molasses and 3 teaspoons of vanilla extract to the mixture.

Grate 2 apples and add them to the bowl (about 2 cups).

Grate 3 carrots and add them to the bowl (about 3 cups).

Mix the ingredients by hand until well combined.

Add 3/4 cup of shredded coconut, 3/4 cup of chocolate chips, and 3/4 cup of walnuts to the mixture.

Add 3/4 teaspoon of salt, 3 teaspoons of baking soda, 3 teaspoons of cinnamon, 3/4 cup of white sugar, and 3/4 cup of brown sugar to the bowl and mix well.

Incorporate 1 and 1/2 cups of white flour and 1 and 1/2 cups of rye flour into the mixture, being careful not to overmix.

Use a muffin scoop (2 and 1/2 inch diameter) to portion the batter into greased muffin tins.
