Whisk together flour, sugar, nutmeg, cinnamon, baking soda, and salt in a bowl.

In a medium-sized bowl, combine 3 eggs, 1/2 cup canola oil, and 1 cup of unsweetened applesauce. Mix well.

Add 1 cup of shredded apple, 1 cup of shredded zucchini, and 1 cup of shredded carrot to the wet mixture and mix well.
