1

Heat a large pan on medium heat.

2

Squeeze the first sausage out of its skin and break it up with a spoon, frying it in the pan.

3

Add 8 sausages to a baking tray and drizzle with oil, aiming for about half a cm of oil.

4

Preheat the oil in the tray by placing it in the oven for 10 minutes.

5

Slice 3 onions finely and fry them in the same pan on medium heat for about 20 minutes, seasoning with black pepper.

6

In a mixing bowl, combine 700 g of plain flour, a good pinch of salt, 500 ml of whole milk, and 450 ml of wheat beer, whisking until smooth.

7

Add 14 large free-range eggs to the batter and whisk until silky smooth.

8

Pour half of the batter into a jug for easy access later.

9

Add a handful of rosemary to each tray with the sausages and hot oil.

10

Pour the batter over the sausages in the first tray, then pour the remaining batter into the second tray, filling it about 2 cm from the bottom.

11

Close the oven door and do not open it for 30 minutes to maintain temperature.

12

For the gravy, add 2 tablespoons of brown sauce and 1 teaspoon of whole grain mustard to the onions.

13

Stir in 2 heaped tablespoons of plain flour and 1 chicken stock cube, then gradually add 700 ml to 1 liter of boiling water, stirring until thickened.

14

Boil 800 g of Maris Piper potatoes until tender, then steam dry them in the pan.

15

Fry 6 big Cumberland sausages in olive oil on medium heat for about 10 minutes until golden.

16

Prepare vegetables like carrots and leeks, chopping them into chunks.

17

After frying the sausages, remove them and use the pan to fry the vegetables for 10-15 minutes until they shrink down and develop flavor.
