1

Sift the flour into a mixing bowl.

2

Make a well in the center of the flour and add the eggs, salt, and black pepper to taste.

3

Whisk the mixture together.

4

Gradually add the milk a little at a time until the batter is smooth and well combined.

5

Transfer the batter into a jug, cover it, and put it in the fridge for 1 to 2 hours to relax the gluten.

6

Preheat the oven and take out a hot tin pan.

7

Add the lard and sausages to the hot pan, pricking the sausages with a knife to prevent them from popping.

8

Return the pan to the oven to cook the sausages for 10 to 15 minutes until partly cooked.

9

Remove the batter from the fridge and give it a light whisk to mix any flour that has sunk to the bottom.

10

Once the sausages are partly cooked, arrange them in a line in the pan and pour the batter over them.

11

Put the pan back in the oven and bake for another 30 to 35 minutes without opening the oven door.
