It reflects the resourcefulness of British cooking, utilizing simple ingredients to create a hearty meal. Take a cup or bowl and fill it to the top with plain or all-purpose flour, leveling it off without pressing down.
Place the flour into a mixing bowl.
Using the same cup, fill it to the top with milk and add it to the mixing bowl.
Crack enough eggs into the cup to fill it to the top and add them to the bowl.
Whisk everything together until completely smooth.
Cover the mixture and place it in the fridge to rest.
Cut the red onion into quarters, peel off the skin, and cut each quarter in half again while keeping the root intact.
Place a frying pan over medium-high heat and drizzle in 20 ml of olive oil.
Once the oil is hot, add the onion wedges and optionally add sprigs of rosemary for flavor.
Fry the onions until golden brown on each side, seasoning with salt and pepper as you turn them.
Splash the caramelized onions with balsamic vinegar just before removing them from the heat.
Wrap each of the four large pork sausages in three rashes of smoky pancetta.
Preheat the oven to 190°C.
Drizzle enough oil into your chosen oven-safe pan to cover the bottom by about 2 mm.
Place the pan into the preheated oven and heat it up for 10 minutes.
Take the yorkshire pudding mixture from the fridge and season it with a generous pinch of salt and fine ground white or black pepper.
Whisk the seasoning into the mixture until fully incorporated.
Remove the hot pan from the oven and pour in the yorkshire pudding batter.
Randomly place the pancetta-wrapped sausages into the batter and dot the caramelized onions around them.
Place the toad in the hole into the preheated oven and bake for 45 to 50 minutes until golden and crisp around the edges.
Serve immediately with gravy and vegetables of your choice.
