60 g lemongrass
250 g red onions
75 g garlic
250 g shallots
2 tbsp shrimp paste
1 and 1/2 tbsp dry shrimp
1 teaspoon salt
30 g ginger
35 g galangal
20 g turmeric
6 pieces candlenut
175 g blended guilo chili
150 g blended dry chili
600 ml water
1/2 cup tamarind water
1 and 1/2 tbsp sugar
5 tbsp cooking oil

Prepare ingredients: chop red chili, red onions, shallots, ginger, and galangal into smaller pieces.

Blend lemongrass, red onions, dry shrimp, and half of the water for 1 minute.

Add remaining water and blend for another 20 seconds.

Add garlic and red chili, blend for 45 seconds until fine.

Add remaining blended chili paste and 150 ml water, blend for 30 seconds.

Transfer mixture to a large bowl, blend shallots and onions with 200 ml water for 40 seconds until fine.

Mix all blended ingredients together in the bowl.

Add sugar, salt, and tamarind water, stir until well combined.

Heat pan, add cooking oil and sambal mixture while oil is cool.

Bring to boil for 2-3 minutes, continuously stir until sambal thickens, cooking for 15 minutes to 1 hour depending on quantity.

Once thickened, switch off heat and let cool for 2 hours before storing.
