Prepare the shallots and garlic in a blender.

Heat up a pan with oil and sauté the blended ingredients until aromatic.

Add in the chili paste and cook until oil separates from the sambal paste.

Add the seasonings: salt, sugar/palm sugar, fish stock, tamarind and cook for another minute.

Add in water and let the sauce simmer on low for 3-4 minutes.

Add in the eggs and onions. Cook for another 1-2 minutes and serve with rice.
