Originating from South India, Medu Vada is a beloved breakfast and snack item made from urad dal. Traditionally served with sambar and chutney, it symbolizes hospitality in Indian culture. Today, variations exist across India, with some regions adding spices or vegetables, making it a versatile dish enjoyed by many.

Ginger paste is convenient and still flavorful.
Soak 1 cup of urad dal for 4 hours.
Discard the water from the soaked dal.
Add 1/4 cup of water little by little and grind to a thick, fluffy batter.
Refrigerate the batter for about 2 hours to cool it down.
Add 1/2 teaspoon of salt, 1 finely chopped medium onion, 2 finely chopped green chilies, and curry leaves to the batter; mix well.
Heat oil for deep frying on medium flame.
Take a small portion of the batter, dab a little water, and shape it into a donut form with a hole in the center.
Gently slide the shaped vada into the hot oil.
Turn the vada at intervals for even cooking until golden brown.
Remove the vadas from the oil and serve hot with coconut chutney.
