Beef Short Ribs Adobo Recipe

Heat vegetable oil in a large pot over medium heat until shimmering.

Add beef short ribs and sear until browned on all sides, about 5-7 minutes.

Remove the beef and set aside, then add chopped onion and garlic to the pot.

Sauté until fragrant and translucent, about 3-4 minutes.

Return the beef short ribs to the pot and add soy sauce, vinegar, and water.

Add bay leaves, black peppercorns, and sugar, stirring to combine.

Bring the mixture to a boil, then reduce heat to low and cover.

Simmer for 1.5 to 2 hours, until the beef is tender and easily pulls apart.

Add chopped potatoes and carrots, cooking until tender, about 15-20 minutes.

Taste and adjust seasoning with salt as needed.

Serve hot, garnished with chopped green onions and sliced red chili.
