1

Pull the leaves from Thai holy basil (Krapow) to release their smell.

2

Set aside the Krapow flowers for later use in the dish.

3

Prepare 3 different kinds of chilies: red jinda, green jinda, and red dried chilies.

4

Roughly pound the garlic without removing its skin.

5

Cut the dried chili into small pieces before pounding it.

6

Combine the pounded garlic and chilies to create a paste with some chunks remaining.

7

Set the chili-garlic paste aside and prepare the sauce by mixing oyster sauce, soy sauce, fish sauce, black soy sauce, and sugar.

8

Turn on the gas to high heat and heat oil in a wok.

9

Add the chilies to the hot oil and stir fry for about 3 minutes until fragrant.

10

Add the shrimp to the wok and cook for a few minutes until just done, being careful not to overcook them.

Add the sauce mixture to the shrimp and a bit of water to prevent burning.
