Peel and wash the potatoes, then soak them in cold water to prevent discoloration.

Cut the potatoes into halves lengthwise and then into about six pieces each.

Heat a pan over medium heat and add 1 tablespoon of oil.

Add 1 sliced onion and 1/4 teaspoon of fenugreek seeds; sauté until onions are translucent.

Add 6 curry leaves and 2 slit green chilies; sauté for 30-40 seconds.

Add 1 tablespoon of ginger garlic paste and sauté for another 30 seconds until fragrant.

Mix in 2 tablespoons of curry powder mixed with a little water; cook for about 1 minute.

Add the cut potatoes and toss until well coated with the masala.

Season with salt and add 1.5 cups of water; mix well.

Lower the heat, cover, and let cook for 15-20 minutes until potatoes are soft, stirring occasionally to prevent sticking.

Check if the potatoes are done by pressing one; it should break easily.

Crush a few of the potatoes with the back of a spoon to thicken the masala.
