Once the oil is heated, add 1 teaspoon of chana dal, 1 teaspoon of urad dal, 1 teaspoon of mustard seeds, and 1 teaspoon of cumin seeds; sauté these ingredients well until the mustard seeds start splattering.

Roughly cut 3 red chilies and add them to the pan, along with 1/2 teaspoon of hing.

Add 2 medium-sized finely chopped onions and fry until they are slightly golden brown in color.

Add a few curry leaves and sauté all these ingredients for 2 to 3 minutes on high flame until the onions are a bit translucent.

Add 4 slit green chilies and 1 teaspoon of freshly pounded ginger garlic paste; sauté for about 1 minute.

Add 2 finely chopped tomatoes and ensure they are fully ripened for better flavor.

Add 1 teaspoon of salt, 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of coriander powder; mix well.

Keep the flame on low to avoid burning the spice powders and sauté until the oil separates from the masala.

Add 1/2 cup of water to make the gravy nice and gooey, cover the pan with a lid, and cook for about 5 minutes to let the tomatoes soften up.

After 5 minutes, check that the moisture is gone and the masala is ready.

Add 500 grams of boiled potatoes that have been peeled and cut into medium-sized pieces; gently mix the masala with the potato pieces without mashing them.

Add 1 teaspoon of garam masala powder and mix well, then taste for seasoning and add 1/2 teaspoon of salt if needed.

Mix everything again and finally sprinkle some freshly chopped coriander leaves; give it a quick mix.
