Lower in calories and fat, or more budget-friendly.

In a bowl, add sliced onion, Persian cucumber, and tomatoes.

Prepare the lemon to dress the salad.

Use about 3/4 pound of Greek feta, cut into a big chunk.

Add a couple of handfuls of pitted Kalamata olives to the bowl.

Slice the onion in one direction, leaving the root attached for easier handling.

Chop the Persian cucumber into little spears and add to the bowl.

Lightly seed the tomatoes, removing excess liquid, and add to the bowl.

Use one tomato per person being served.

Dress the salad with lemon juice to taste, followed by olive oil and a sprinkle of salt.

Add a mixture of fresh herbs: big handfuls of parsley and dill, smaller handfuls of mint, and two sprigs of oregano.

Toss the salad gently to combine all ingredients.
