Let’s cook! 🎉 Feel free to leave a recipe request in the comments I can make a special video just for you! 2-31bs of chicken pieces with skin &bone in tact 3 tbsp olive oil 2 tbsp lemon juice freshly squeezed 1 tsp lemon zest ( or just cut up a lemon and throw it in the mix) 8 garlic cloves whole 1 tbsp Greek seasoning 1 tbsp red wine vinegar 1 zucchini sliced into coins 1 small red onion sliced 1 cup cherry tomatoes ½ cup pitted and halved Kalamata olives 2 tbsp olive oil 1 tsp dried oregano ½ tsp salt ¼ tsp black pepper ½ cup crumbled feta cheese for serving. Fresh parsley optional garnish Greek seasoning 1 teaspoon salt 1 teaspoon freshly ground white pepper 1 teaspoon oregano, dried 1 teaspoon dried thyme 1 teaspoon garlic powder Step 1: Marinate the Chicken In a bowl, whisk together olive oil, lemon juice, lemon zest, Greek seasoning, and red wine vinegar Add the chicken, ensuring it’s well-coated. Let it sit for at least 15 minutes or up to 24 hours for best flavor Step 2: Prepare the Vegetables While the chicken marinates, chop zucchini, red onion, halved Kalamata, cherry tomatoes garlic In a large bowl, toss the veggies with olive oil, oregano, salt, and pepper. Step 3: Assemble on a Sheet Pan Preheat your oven to 375°F (200°C). Spread the marinated chicken on rimmed baking sheet.(line with foil or parchment paper for easy cleanup) bake for 15 minutes Step 4: Roast to Perfection add vegetables return chicken return to the oven for approximately 20 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender If you like crispy edges, broil for the last 2 minutes. Step 5: Garnish & Serve Sprinkle with feta cheese and fresh parsley. Serve immediately with warm pita or tzatziki sauce! You can do it! 2 cups of whole Milk Greek Yogurt One half seedless cucumber (if using a regular cucumber use one large cucumber) 2 clove of garlic press Juice of one freshly squeezed lemon Grate cucumber on large side of grater Place strainer in large bowel Place grated cucumber in strain and press out juice Save juice for other dips or water spritzer In a clean dry bowel add all ingredients and mix well cover and refrigerate until ready to eat, gets better if you can make a day or so ahead to allow all the flavors to mingle You can do it!
