Cut 2 roma tomatoes into bite-sized pieces.

Peel 1/2 cucumber, cut in half, and then cut into bite-sized pieces.

Place tomatoes and cucumbers into a bowl.

Add a pinch of salt and 1 tablespoon of vinegar or white wine vinegar to the bowl and let sit for 10 minutes.

Cut a green pepper from top to bottom and into strips, then cut those strips in half and place into the bowl.

Cut 1/4 of a small red onion into thin slices and toss it into the bowl.

Let the mixture rest for a few more minutes.

Add 1 teaspoon of oregano and mix everything together.

Scoop the salad into a bowl and top with kalamata olives.

Drizzle with 1/4 cup of extra virgin greek olive oil.

Top with a block of feta cheese and sprinkle with more oregano.
