Oats are healthier and gluten-free, while crushed crackers are often cheaper.
Soak ½ cup sabudana in water for 30 minutes and drain the water.
Boil 2 medium-sized potatoes, cool them, peel, and lightly mash them.
In a large mixing bowl, add the boiled potatoes and soaked sabudana.
Add the juice of ½ lemon to the mixture.
Add 1 tablespoon of ginger and green chili paste.
Add 5-7 finely chopped curry leaves (or coriander leaves if preferred).
Add ½ teaspoon raw cumin seeds and ½ teaspoon white sesame seeds (optional).
Add ½ teaspoon crushed black pepper and 1 finely chopped green chili.
Add 1-2 pinches of red chili powder and salt to taste.
Mix all the ingredients well until it forms a dough-like consistency.
Grease a lid or plate with oil and set it aside.
Transfer the dough onto the greased lid or plate and shape it as desired (like a tikki or roll).
Invert the greased lid or plate onto another plate and tap lightly to release the shaped dough.
Cut the shaped dough into desired pieces using a spoon, knife, or pizza cutter.
Heat ½ cup oil in a pan over medium flame until hot.
Add the shaped pieces to the hot oil for frying.
Fry the pieces on medium flame without stirring immediately to avoid breaking them.
After about a minute, flip the pieces to fry the other side until golden brown and crispy.
Continue flipping every minute until all sides are crispy, which takes about 3-4 minutes total.
Remove the fried pieces from the oil and drain on paper towels.
Serve hot with any chutney.
