1

Wash your hands.

2

Draw four circles onto baking paper using a pencil, around a small bowl.

3

Turn the baking paper over and place it onto an oiled baking sheet.

4

Crack 2 eggs into a mug one at a time, checking for shells.

5

Tip the egg yolks into an egg cup and the egg whites into a bowl.

6

Wipe your hands after touching raw egg.

7

Whisk the egg whites with a handheld rotary whisk until they go white and frothy.

8

Gradually add caster sugar a little at a time while whisking.

9

Add corn flour and a squeeze of fresh lemon juice from 1/4 lemon and whisk until combined.

10

Roll over the top of a piping bag and place it inside a jug, then spoon in the mixture.

11

Hold the top of the piping bag together with one hand and gently squeeze the bottom with the other to pipe the mixture out.

12

Use the circles on the baking paper to guide you, and dip the back of a spoon into each one to make space for the filling.

13

Ask a grown-up to put them in the oven for you.

14

While they are cooking, twist and break 2 kiwi fruits in half and scoop out the insides with a spoon.

15

Carefully cut the stalks off strawberries and chop them into pieces.

16

Add vanilla bean paste to whipping cream and whisk until thick and creamy.

17

When the meringue nests have cooked and cooled completely, place them on a plate.

18

Top each meringue nest with a dollop of cream, kiwi fruit, and strawberries.

19

Add some mint leaves from a sprig of fresh mint.
