Preheat the oven to 280 to 300 degrees Fahrenheit.
Prepare the pork belly by placing whole garlic and lemongrass inside for flavor.
Rub salt and black pepper all over the pork belly, ensuring to cover it well.
Tie the pork belly with nylon string to secure it.
After tying, add more salt on top of the pork belly.
Pour soy sauce over the pork belly for color and flavor.
Place the pork belly in the preheated oven.
Cook for around 40 to 45 minutes, checking every 20 minutes to prevent burning the skin.
After 45 to 60 minutes, remove the pork belly from the oven and take off the string.
Chop the pork belly using a bread knife to avoid crushing the skin.
Serve with a dipping sauce made from soy sauce, vinegar, and onions.
