Turn dial to Sauté and adjust Temperature to 300°F. Press Timer and adjust to 16 minutes. Press Start. In the Inner Pot, cook beef until no longer pink, 4 to 5 minutes; transfer to a large bowl.

In the Inner Pot, melt butter and olive oil. Add garlic and shallot; cook and stir 1 minute.

Stir in mushrooms and wine. Cook until mushrooms are tender, 8 to 10 minutes; add to beef. Stir in parsley, salt, and pepper. Transfer to a bowl. Carefully wipe out Inner Pot.

For each wonton, place about 2 tsp. filling in the center of a wonton wrapper. In a small whisk together egg and 1 Tbsp. water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal.

Place Grill Plate in the Inner Pot. Turn dial to Air Fry and adjust Temperature to 325°F. Press Timer and adjust to 10 minutes.

In batches, arrange wontons in a single layer on the Grill Plate; lightly coat with cooking spray. Close the Air Frying Lid and press Start. Cook until lightly browned, 4 to 5 minutes. Turn; spray with cooking spray. Cook until golden brown and crisp, 4 to 5 minutes longer.
