Green Gungo Rice & Peas with Stew Pork

Season pork with garlic, ginger, thyme, pimento seeds, salt, and black pepper.
Rub seasoning into pork and let marinate.
Wash gungo peas and transfer to a pot.
Add water to gungo peas and bring to a boil.
Add grated coconut and cook for 5 minutes.
Wash rice and add to the pot with gungo peas.
Cook for about 1 hour until tender.
In a separate pot, heat butter and add marinated pork.
Sear pork until browned, then add water to tenderize.
Cover and cook for an additional 20 minutes.
