1 teaspoon sugar
250 ml milk
50 grams fresh yeast
500 grams flour
100 grams sugar
100 grams butter
1 egg

Grind 1 gram of saffron with a teaspoon of sugar.

Warm the milk to 37 degrees Celsius (98 degrees Fahrenheit) and add the saffron.

Crumble 50 grams of fresh yeast in a large mixing bowl and add the milk.

Add the rest of the ingredients and work the dough for 10 minutes.

Cover the bowl and let the dough rise for 30 minutes.

Shape the dough into traditional Swedish lucia buns and cover them, letting them rise for another 30 minutes.

Set the oven to 220 degrees Celsius (430 degrees Fahrenheit).

Brush the buns with egg wash and add raisins on top.

Bake in the middle of the oven for 6 to 8 minutes.
